4 Meals for €10 | College Dinners

     So, October nearly done and heading into the first long weekend of the College year.  Cork City is always mighty craic for the Jazz festival – it just always is! I know, I know, who among us actually owns any jazz CD’s but the atmosphere and buzz around the town is always worth checking out…

     So hopefully this cooking for yourself is going well and you’ve crafted your own little speciality.  Mine was always a tuna pasta – somehow there was always pasta and tuna in the cupboard (when all else failed…aah, the simple pleasures!).Our recipe for this issue is a firm favourite and the resounding feedback from most people was that it was one of the first recipes they tried to master (well make edible at least)once they set off into the world of fending for themselves – ready ... steady ... Spag Bol Spaghetti Bolognese Ingredients1 Portion of beef minceGlug oil1 small onion, finely chopped½ cup beef stockClove of garlic1 tsp (the small spoon) of mixed herbs/Italian½ can of chopped tomatoesPortion of SpaghettiCooking Instructions

     Heat oil in a heavy-based pan/wok and add onion and garlic stirring over a moderate heat (halfway on ring dial) for 1-2 minutes .Add your beef mince, stirring constantly until well browned should take approx. 6-8 minutes.

     Stir in your beef stock and chopped tomatoes along with your mixed herbs cover and simmer for approx. 25-30 minutes to allow flavours infuse.

Serve with your favourite spaghetti (cooked as per instructions) or with some bread and salad - happy days!

     Try this one out and as always our motto is make it your own.  A friend of mine is a strong advocate of chilli flakes and tabasco sauce. My own personal favourite is to add some sausage meat and mix it with the beef when cooking at the start - always adds a touch of je ne sais quoi , but tastes pretty good!
